Since the holidays are always crazy busy (but you want something sweet…), I’m sharing my favorite Chocolate Banana Cookies recipe. They’re quick, easy, and only three ingredients! They are also vegan and gluten free, so you can feel good about eating a few.
Ingredients
1 cup Gluten Free Quick Oats
2 tbsp Cacao Powder
2-3 very ripe bananas
Any mix-ns
I used dark chocolate chips for this batch, but you can use whatever you’d like!
Directions
First preheat your oven to 350 degrees and line a baking sheet with parchment paper.
Mash the ripe bananas in a bowl. Mix in 2 tbsp of unsweetened cacao powder and 1 cup of quick oats until it’s a similar consistency to cookie dough. The mixture may seem dry at first, but after a few minutes of mixing it will turn into a batter.
Fold in any mix-ins. (I added a handful of dark chocolate chips. Peanut butter is another one of my favorites.)
Create the cookie clumps with your hands and a spoon. These cookies will not flatten or change shape with baking, so make sure you’re happy with them.
Bake at 350 degrees for 10-15 minutes.
Enjoy them right out of the oven! They’re the best when served warm, but you can store them in a container for later.
